Emmerich Knoll is on the short list of Austria’s best winemakers. And by short list, we mean like three people, short. Their grüners are some of the most complex and spicy white wines you’ll ever come across. They’re also about as age-worthy as whites get, requiring at least a decade, and capable of going far longer than that.

Tastes like: Hazelnut, dill, papaya, white pepper, smoke.

How to drink: Not too cold, with poached fish or farro salad and grilled chicken.
