The grape palomino is used to make Sherry, but when left unfortified it’s capable of making crisp, zesty whites like this that taste more like ocean air than sweet fruit. Try it instead of pinot grigio and surprise yourself.
Tastes like: Quince, ginger, ocean.
How to drink: Great with a plate full of oysters, but also crunchy spring vegetables.
