This natural orange wine is made by a group of Cistercian nuns near their convent outside Rome. Giampiero Bea, son of Paolo Bea, serves as an adviser at Monastero, so it's no surprise that this skin-contact blend is simultaneously rich and highly refreshing.
Tastes like: Apricot, chamomile, and white balsamic.
How to drink: Chilled alongside pesto orecchiette with broccoli rabe, and other dishes involving tricky vegetables.
