At least, that’s what Olivier Morin did when he left the radio booth for the vineyard in 1992. Granted, Olivier had previously studied winemaking in Burgundy, and he took over his family’s nearly 400 year-old domaine located a stone’s throw from Chablis. Nevertheless, his meticulous farming and organic winemaking practices have produced fantastic results. This chardonnay is super lean, a bit salty, and reminiscent of a walk on the beach when the water’s too cold to go swimming. Think of it as a great value-alternative to Chablis.
Tastes like: Lemon, sea salt, crushed rocks, yellow pear.
How to drink: Drink it chilled on its own to start the night, or with oysters and charcuterie.
