Agustí Torello Roca makes our favorite sparkling wine in Spain. This savory, natural white wine comes from Roca’s side-project nearby in Catalonia. He uses the local xarel-lo grape, which he farms organically before bottling the wine unfiltered. It has xarel-lo’s inherent crispness and salty notes, but unlike most versions, it has texture and weight to stand up to roast chicken or hearty seafood dishes.

Tastes like: Ripe peach, lime zest, sea salt, almond.
How to drink: Chilled with pan-seared scallops, fish tacos, or even pork chops.
