Daniel-Etienne Defaix, Chablis Premier Cru 'Côte de Lechet' 2012 (Pre-Sale Arriving Early April)

Daniel-Etienne Defaix is known for his unhurried approach to winemaking, often aging his Chablis for more than a decade before it’s even bottled. This extended time in tank, combined with the old vines and incredibly steep slopes of this Premier Cru, create a complex white wine that still tastes fresh, salty, and chalky (in a good way) after 14 years.
Here's what you should know about it:
- Daniel-Etienne Defaix ages his Chablis in stainless steel tanks for extended periods, often more than a decade prior to bottling. This allows the wines to develop complexity and rich texture while remaining fresh.
- Côte de Léchet is a steep, chalky Premier Cru vineyard, which Defaix farms organically. The newest release of this wine is 2013.
- While this Chablis would have tasted like a lemon sour patch kid 10 years ago, it has evolved into a subtly savory, salty, honey and citrus-accented white wine.
