Dauvissat, Chablis 2018
$120
We’ll keep this one short: Dauvissat is as good as Chablis gets. Vincent Dauvissat’s salty, detailed, richly textured wines continue to set the bar. His ‘18s are stunning across the board.
Here's what you should know about it:
- Along with Raveneau, Dauvissat is the greatest producer in Chablis, and one of the benchmarks for all of Burgundy.
- Dauvissat and Raveneau both pick late, keep yields low, and age their wines for long periods in old barrels. The result is complex, very long-lived white wines.
- Vincent Dauvissat makes small quantities of this Chablis from a plot adjacent to his famed plot in Forêts.

As sommeliers, we often get asked, “What’s the best wine on the list?”
