We’ll keep this one short: Dauvissat is as good as Chablis gets. Vincent Dauvissat’s electric, salty, richly textured Premier Crus define the style, and stand among the most collectible whites in all of Burgundy.
Here's what you should know about it:
- Along with Raveneau, Dauvissat is the greatest producer in Chablis, and one of the benchmarks for all of Burgundy.
- Forest is Dauvissat’s flagship Premier Cru.
- The wine is chalky and saline in the best way, with bright acidity and rich citrus notes. It’s thoroughly enjoyable today, but it has the structure to age as well.
