This refers to fermentation that begins courtesy of native yeasts, which exist naturally on the grapes, or around the vineyard or winery. The alternative is to use industrialized yeasts, which are cultivated to produce consistent, often mass-produced, wines. Wild yeasts yield a wider range of flavors and textures, as well as added complexity and a more authentic sense of place.
