Jérôme Prévost is a giant among small-growers in Champagne. At his winery, La Closerie, Prévost (known, like most mysterious artists by his last name only) makes wines from one grape, one vintage, and one tiny vineyard. The grape is pinot meunier– familiar enough in champagne, though in Prévost's hands something altogether new: rich, powerful and precise. 'Fac-Simile' is his rare Rosé– very much the pink diamond of the line-up.
