Domaine de Chassorney, Saint-Romain Rouge 'Sous Roches' 2022

Domaine de Chassorney was launched by Frédéric Cossard, a trailblazing natural winemaker, in 1996. Over the ensuing decades, his releases have gained a rare level of crossover appeal, sought-after by fans of both natural wine and collectible Burgundy. Fred and his protégé Aurélien Verdet, who took over in 2022, are based in the village of Saint-Romain. From a steep, old-vine plot in this relatively cool part of the Côte de Beaune, they make this bright, lifted Red Burgundy.

How to drink: Roast chicken would be ideal, but it’d work with grilled fish or pepperoni pizza as well.
