What Wines to Order at Dr Clark

There are a lot of aspects to Dr Clark that compete for your attention. It’s a sceney spot in Chinatown that was profiled in Vogue before it even opened. In the afternoon, you’ll see groups sitting shoeless on mats at outdoor kotatsu tables, while at 1am, you’ll be met with music and aromas of sizzling meat before you walk through the door. Those meats, like three different versions of lamb, are grilled tableside, and served with specialties from Hokkaido like squid stuffed with uni rice or a risotto omelette with crab and salmon roe. With all that going on, it’d be understandable if wine isn’t the first thing on your mind. Fortunately, it’s the first thing on ours.

Pierre Peters BdB Champagne, France

Champagne pairs with all types of food, which is important at Dr Clark given all the different ways you can start a meal here. Whether you go with sashimi, uni french fries, or fried chicken, you’ll be happy with a glass or bottle of this wine from one of the best producers in Champagne.

2018 Raul Péréz 'Ultreia Saint. Jacques,’ Mencia, Bierzo, Spain

You should drink wines from Raul Péréz every opportunity you get. At Dr Clark, that opportunity involves pairing peppery, juicy mencia with peppery, juicy meat sizzling on the tabletop grill in front of you.

2018 Jacky Blot ‘La Taille Aux Loups’, Chenin Blanc Vouvray, France

If you want something that’s rich enough to pair with anything on the menu, but crisp enough that you’re not ready for bed by the time the check arrives, go with this organic bottle of Vouvray. Jacky Blot makes some of the best chenin blanc in the Loire.

From biodynamic German orange wine to Pennsylvania rye whiskey, there are a lot of drinks at Dr Clark that’ll be unfamiliar. This unfiltered, no-added-sulfur red wine made with portugieser grapes is no exception. It’s also low-risk considering it’s the least expensive wine on the menu.
