Ayunta, Etna Rosso 'Calderara Sottana' 2017


Filippo Mangione was raised on the coast of Sicily where his family made wine in a palmento, which is essentially a garage designed for winemaking. They made wine for themselves and tended to their vines as if they were a garden, which is to say, with care. Filippo went on to work in restaurants as a sommelier before starting Ayunta, an all-organic winery based on Sicily's volcano, Mount Etna.

Tastes like: Blood orange, fennel, and oregano.

How to drink: Slightly chilled, alongside fried soft shell crab (or fried chicken)
