Until recently, Camille Thiriet made wine in a garage in Burgundy that had no electricity or running water. In other words, ‘artisanal’ didn’t really do it justice. So while most Burgundy producers don't give aligoté the same attention as their chardonnay. Camille Thiriet doesn’t have that luxury. She uses vines up to 80 years-old to craft a textured, elegant white that’s one of the best expressions of aligoté around.
Tastes like: Apricot, smoke, salted almonds.
How to drink: Chilled alongside soft cheeses or any type of fresh seafood.
