Long thought of as chardonnay’s simpler Burgundian counterpart, aligoté is now creating exceptional white wines all over the region. Some of the best examples come from Bouzeron, an area in the Côte Chalonnaise where aligoté is the sole permitted grape. That’s where Julien Cruchandeau, a former musician, set up shop. His low-yield, organic vines produce a fresh, chiseled expression of aligoté.
Tastes like: Peach, citrus blossoms, salted almonds.
How to drink: Chilled with cheese, simply prepared seafood, or on its own.
