Château Chalon denotes a wine style called ‘Vin Jaune’, which is a Jura specialty. It’s made with savagnin grapes, which are aged oxidatively like Sherry for years in barrel before bottling. Unlike Sherry, however, the resulting wine isn’t fortified. It’s nutty, richly aromatic, and dry.
