Not all Red Burgundy is meant to age. Some of it isn’t meant to go beyond three years, let alone three decades. That’s part of what makes finding truly age-worthy ones so exciting. As the years and decades pass, the wines soften and deepen, with tart fruit flavors replaced by complex savory ones like leather, meat, and mushrooms. This bottle from Pierre Bourée is one of those wines.

From a vintage and village both known for big, structured wines, this needed a long time in the bottle. It’s gotten it. And now as it approaches its 30th birthday, it’s fully come together, and is in a perfect place to drink now.
