Thierry Pillot, Bourgogne Blanc 2020

Since taking over in 2004, Thierry Pillot has made the wines of Domaine Paul Pillot some of the most sought-after in Burgundy. This Bourgogne Blanc is made primarily with grapes from Chassagne-Montrachet. As is Pillot’s style, it’s textured, salty, and mineral-driven.

Tastes like: Ripe peach, lemon zest, salted almonds, vanilla.
How to drink: Not too cold, ideally with lobster or sautéed scallops.
