Dominique’s family has been making wine in the village of Bué for centuries, and his high-elevation vineyards are some of the best in the region. At Domaine du Carrou, he hard-harvests those organic plots of sauvignon blanc to make precise, deeply textured whites that remind us of top-class Chablis.
