Dominique Gruhier, Petit Chablis 2023

Dominique Gruhier makes wine in Epineuil, a village in the far northern reaches of Burgundy. Born just a mile away, Gruhier has been working the area’s steep vineyards for decades, farming his own organically since the early ‘00s. All of his bottlings, certainly including this Petit Chablis, have a chalky, briny freshness that reflects their cold, limestone growing sites.

Tastes like: Green apple, oyster shell, salted almonds.
How to drink: Chilled with oysters, sushi, or a citrusy salad.
