No winemaker is more responsible for Spain’s 21st century quality revolution than Raúl Pérez. A visionary who has left his stamp on projects across the country, Pérez is based in the area of Bierzo in Galicia. There on remote, high-altitude plots inland from the Atlantic, he crafts this smoky, medium-bodied white wine from the local godello grape.
Tastes like: Pear, fennel, chamomile, sea salt.
How to drink: Chilled with scallops, fish tacos, or roast chicken.
