Robert Chevillon, Nuits-St-Georges Premier Cru ‘Les Cailles’ 2018

Very few winemakers boast as impressive a collection of Premier Cru vineyards as Robert Chevillon. If we were monks back in the 18th century we would have called vineyards like ‘Cailles’ and ‘Vaucrains’ Grand Crus, but we weren't so they remain some of Burgundy’s most sought after steals today. Chevillon is known for a fresh, floral, and just slightly earthy style of Burgundy.

Like ordering the burger at Raoul's, the Pernil at Los Primos, or Pastrami on Rye at Katz’s, drinking Les Cailles is the only correct answer when presented with the opportunity. It’s Chevillon’s top vineyard and the bottle of his we’d drink every day if we could. Might as well be Grand Cru.
