Markus Sonntag is unique. He has run his family winery in northeastern Austria for the past quarter-century, while also keeping a day job as a computer scientist in Vienna. He farms the small property near the Czech border like his personal garden, and then ages the wines in the estate’s labyrinthian cellar for very long periods before release. This white wine was bottled after spending 9 years in barrel. It’s complex and savory, more like aged chenin blanc or White Burgundy than the vast majority of gruner veltliner.
Tastes like: Dried apple, hazelnut, brioche, sea salt.
How to drink: Chilled - not cold - with pork schnitzel or aged cheeses.
