AT Roca, Reserva Clàssic Métode Tradicional

Part of the reason that Cava quality is so variable is the fact that it can come from anywhere in Spain. That never sat well with AT Roca. So despite coming from a legendary Cava family, he helped create a new appellation with much stricter production requirements. Cava from this new region of “Classic Penedes” must be certified organic, aged as long as Champagne, and vintage dated. AT Roca hand-harvests his grapes and adds no extra sugar to create a fresh, minerally Cava that’s a great value alternative to Champagne.

Tastes like: Red apple, lime, toasted almonds.

How to drink: Drink cold with oysters or anything from the raw bar.
