Giusto Occhipinti, and his winery, COS, changed the game for Sicilian wine. Launched in 1980, COS adopted organic farming from the outset and solely worked with native grapes. They’ve since become the island’s benchmark natural producer, and this is their top bottling. Made from a blend of frappato and nero d’avola, it has the brightness of Beaujolais with the peppery depth of Rhône syrah.
Tastes like: Wild raspberry, black pepper, smoked oregano.
How to drink: Lightly chilled with burgers or pepperoni pizza.
