Benoit Lesuffleur is a busy guy. Just 30 years old, Benoit splits his time between Paris - where he’s a wine broker representing domaines like Lafarge and Henri Germain - and Normandy, where his family has been growing apples for generations. From the best of his family’s orchards, he hand-picks a bunch of heritage apple and pear varieties to make ciders using the same method as Champagne. For the Folletière, he uses about 12 different types of apples to make a rich, slightly spicy cider.
