COS, 'Zibibbo in Pithos' 2022

 Giusto Occhipinti changed the game for Sicilian wine. Organic from the outset, biodynamic shortly thereafter, nothing but native grape varieties - COS has been as influential as any natural producer in Italy. They craft this orange wine from the local zibibbo grape, which they keep in contact with the skins for seven months, yielding a deeply textured, powerfully aromatic wine.

Tastes like: Apricot, wildflower, preserved lemon.

How to drink: Chilled with grilled octopus, roasted eggplant, or chicken tagine.
