Before launching Cassiopée in 2020, Hugo Mathurin and Talloulah Dubourg worked at Roulot, Mugnier, Clos de Tart, and Benjamin Leroux. Understandably, their wines came with big expectations. They have more than lived up to them. They're making some of the most exciting white wines in Burgundy today.
Hugo and Talloulah make this piercing, ultra-fresh white from aligoté. It's a grape that Cassiopée handles as well as any producer in Burgundy. 'En Gerlieus' is a parcel consisting of very old vines - some with a 100+ years of age - which gives the wine complexity and lots of salty intensity.
