The tiny winery was launched by Hugo Mathurin and Talloulah Dubourg, who had previously worked at places like Mugnier and Clos de Tart. Jean-Marc Roulot essentially wrote their reference letter into the collectible Burgundy market. A couple years later, and Cassiopée is getting the hype it fully deserves. 'Les Côtes' is in Cassiopée’s home village of Maranges, located on the site of an old forest. That comes through in this white wine, which is earthy, savory, and fresh.
