When it comes to the northern reaches of Burgundy, the conversation usually begins and ends with Chablis. Dominique Gruhier is changing that. In the village of Epineuil, Dominique is making pure, vibrant wines from the same oyster shell-laden soils you’d find 15 minutes south in Chablis. His organic pinot noir is briskly mineral and high-acid, though rising temperatures have allowed the grapes to achieve added ripeness. This gives the wine a level of depth and intensity that was previously not possible.
Tastes like: Tart red cherry, roses, smoke, dried leaves.
How to drink: Lightly chilled with cheese and charcuterie.
