This pét-nat comes from a new project in the Loire Valley from rising stars Mathieu Cosme and Fabien Brutout. The duo biodynamically farm chenin blanc vines near Vouvray, before aging the wine in barrel. They allow it to finish fermentation in the bottle, which is where it gets its bubbles. The result is a crisp, salty sparkling wine.
