When it comes to the northern reaches of Burgundy, the conversation usually begins and ends with Chablis. Dominique Gruhier is changing that. In the little known village of Epineuil, Dominique is making pure, vibrant wines from the same oyster shell-laden soils you’d find 15 minutes south in Chablis. His sparkling wine - a blend of pinot noir and chardonnay - is a crisp, subtly toasty alternative to Champagne.
