In the all-too-elusive category of undervalued Burgundy, one region that consistently rewards exploration is the Côte Chalonnaise. In this area south of the Côte de Beaune, Mia Subotic took over her family’s 160 year-old domaine in 2020, and importantly, its key vineyard: the Clos la Marche. This old-vine plot, which many in Burgundy believe warrants designation as a premier cru, yields an elegant, silky, concentrated red wine.
Tastes like: Red cherry, dried roses, mushroom, leather.
How to drink: An ideal pairing for roast chicken, pasta with mushrooms, or lean cuts of red meat.
