The best Sicilian wines come from the slopes of Mount Etna, a two-mile-high active volcano that receives a constant bombardment of winds from the nearby Mediterranean Sea. As you might imagine, the unique growing conditions yield whites that are smoky and briny. Nobody masters those conditions like Salvo Foti, who organically farms the local carricante grape to make this vibrant, crisp white wine.
