If you like White Burgundy and Chablis (i.e. you enjoy white wine and have a pulse), we always recommend the whites of Mount Etna in Sicily. Made from the local grape carricante, the wines are salty and bright with citrus, and have texture without being in the least bit oaky. Year after year, this bottling from Salvo Foti - Etna's greatest winemaker - is our favorite.
