Like Wasenhaus and Stefan Vetter, Carsten Saalwächter is currently showing how compelling German white wines can be when made from grapes other than riesling. In the Rheinhessen, Carsten uses weissburgunder (pinot blanc) to produce this featherweight, vivid, refreshing white wine.
Tastes like: Green apple, smoke, basil, sea salt.
How to drink: Chilled alongside bright seafood dishes, like baked salmon with lemon and dill.
