Since taking over their family's historic property in Saint-Aubin, brothers Jean-Baptiste and Benoît Bachelet have actively pursued a style focused on freshness and precision rather than oak. They source grapes for 'Les Encegnieres' from a tiny plot of old vines just below Bâtard-Montrachet. It's rich and structured with concentration typically reserved for premier cru bottlings twice the price.
Tastes like: Nectarine, salt almonds, smoke.
How to drink: Lightly chilled with sea bass, seafood pasta, or even pork chops.
