Jean-Claude Bachelet is a historic property in Saint-Aubin, but its wines have only joined the region’s elite in in the last decade or so. That’s thanks to brothers Jean-Baptiste and Benoît Bachelet, who’ve implemented biodynamics and minimized oak in order to pursue a style focused on freshness and precision. This old-vine pinot is deeply structured and offers the grippiest tannins of any wine in the Bachelet lineup.
Tastes like: Plum, mushroom, violet.
How to drink: Decant and enjoy with skirt steak or roasted mushrooms.
