At Pattes Loup, Thomas Pico makes some of our absolute favorite examples of Chablis. Thomas’ other, less-known passion is for pinot noir. It led him to collaborate with a few friends on a project in nearby Irancy. Here in the northernmost reaches of Burgundy, they organically farm less than a hectare of pinot noir to make necessarily tiny quantities of this lithe, beautifully perfumed red wine.
Tastes like: Tart red cherry, roses, black pepper.
How to drink: Lightly chilled alongside a cheese and charcuterie board.
