There are some French regions where you’re fairly safe choosing wine at random. Languedoc isn’t one of them. This vast area south of Provence and north of Roussillon produces a ton of wine, with the majority being mass-produced and forgettable. The wines of Olivier Jullien are major exceptions. Olivier organically farms high-elevation plots just inland from the Mediterranean, producing a concise range of site-specific red wines. ‘Carlan’, primarily made with old-vine grenache, is suave, earthy, and richly dark-fruited.
Tastes like: Blueberry, violet, truffle, tapenade.
How to drink: Ideal wine with lamb chops or chicken cassoulet.
