In a region known for wines that are ‘correct’ and ‘reliable’ rather than ‘exciting’ and ‘innovative’, Thomas Pico is making waves. With hand-harvested, low-yield, organic grapes, Thomas is making some of our favorite wines in Chablis today. They’re powerful and concentrated, while still retaining Chablis’ classic brisk, refreshing saltiness as well.

Tastes like: Green apple, lemon zest, toast, sea salt.
How to drink: Chilled but not cold, alongside cooked seafood or fried chicken.
