Lambrusco doesn’t have a great rap in the US, and frankly, that’s fair. A lot of it is sweet, mass-produced, and boring. This rosé Lambrusco from Silvia Zucchi is none of those things. The third-generation of her family to make wine in Emilia-Romagna, Silvia farms organically and employs a rare, labor-intensive technique to give the wine its bubbles. The result is a dry, herbal sparkling rosé that’s versatile with food, yet refreshing enough to enjoy on its own.
Tastes like: Watermelon, thyme, sea salt.
How to drink: In place of a late afternoon spritz, or outdoors with a bright salad. Either way, serve cold.
