In the northwestern corner of Sicily, Aldo Viola makes this natural white wine from a blend of hand-harvested local grape varieties. Aldo macerates the catarratto and grillo with the grape skins for a short period of time, boosting the aromatics and texture, leading to a crisp and savory white wine.
Tastes like: Apricot, orange zest, smoke, honeycomb.
How to drink: Chilled with fish tacos, spicy shawarma, or eggplant parm.
