Luis Rodríguez makes wine on the steep hillsides of Galicia, but with the exception of Emilio Rojo, he stands alone in Ribeiro. The 'Escolma' is the top white in Luis’ lineup. It's old-vine treixadura, which tastes like premier cru Chablis with a bit more density. It’s only made in select vintages, and is on our shortlist of best white wines in Spain.
