Biodynamic farming, zero added sulfur, no filtration. These are becoming common practices in an array of wine regions. Rueda in north-central Spain is not one of them. And yet, Manuel Cantalapiedra doesn’t do it any other way. Using the local verdejo grape, Manuel makes this white wine that’s rich and round yet salty and fresh.
Tastes like: Apricot, lemongrass, smoke, honeycomb.
How to Drink: Chilled with soft cheeses or seafood paella.
