Mallorca doesn’t have the winemaking pedigree of some other Mediterranean islands, but that’s beginning to change. The reason? Cati Ribot. After training as a sommelier in Barcelona, Cati returned to her native Mallorca, and began experimenting with the Spanish island’s extremely esoteric, native grape varieties. A decade or so later, her vibrant reds are gaining a following in natural wine circles around the world. Cati makes this light-bodied red from a single-vineyard planted with grapes like escursac, callet, and giró negre.
Tastes like: Strawberry, black pepper, violets, mushroom.
How to drink: Chilled with pizza, cured meats, or a cheeseburger.
