
Clos Cibonne Tibouren, Provence Rosé 2021
This is one of the most serious rosés in France, which is another way of saying it isn’t a rosé to drink from a plastic cup on a pool float. Clos Cibonne is one of the best and most historic producers in Provence. They specialize in wines made from a rare, native grape called tibouren, which they farm organically on a hillside a few hundred yards from the Mediterranean. The resulting wine is savory, herbal, and exceptionally food-friendly.
Tastes like: Cherry, fennel, white pepper, salted almonds.
How to drink: Think Mediterranean: fresh vegetables drizzled with olive oil, or grilled fish.
