Aligoté is very much having a moment. Long thought of as chardonnay’s simpler counterpart in Burgundy, it’s now yielding exceptional whites all over the region. David Trousselle’s organic bottling is a prime example. He makes this toasty, salty wine from hand-harvested aligoté just outside Saint-Aubin in the Cote de Beaune.
Tastes like: Pear, honeysuckle, smoked almonds.
How to drink: Chilled on its own, or alongside simply prepared seafood.
