When it comes to the northern reaches of Burgundy, the conversation usually begins and ends with Chablis. Dominique Gruhier is changing that. In the little known village of Epineuil - between Chablis and Champagne - Dominique is making pure, vibrant wines that have been turning heads in Burgundy, and are now doing the same in the U.S.
Dominique makes this red wine from the same oyster shell-laden soils found in Chablis. So while it’s 100% pinot noir, it shares the brisk mineral notes and high-acidity that makes Chablis so easy-drinking. Meanwhile, rising temperatures have allowed the grapes to achieve added ripeness, giving the wine depth and intensity than was previously impossible so far north in Burgundy.
