Stéphane Tissot is the biggest name in the Jura region of France, where his wines have become some of the area’s very best since he took the reins from his father in the early ‘90s. He’s a torchbearer for the natural wine movement and the Jura as a whole, promoting its local styles and native grape varieties. Tissot uses two of those varieties, trousseau and poulsard, as well as chardonnay and pinot noir to make this sparkling wine. It’s rich, salty, and exceptionally food-friendly, an ideal value-alternative to Champagne.

Tastes like: Ripe pear, sea salt, honey, brioche.

How to drink: Comté cheese is the perfect pairing, but fried chicken and fresh seafood are great options as well.
