Beaujolais became a great wine thanks to four influential producers who decided to take themselves and their product seriously, rather than just make commercialized wines as those before them had done. Guy Breton was one of the four. Their style was to make gamay into wine like Burgundy: Light and elegant, but with flavors that are more peppery and herbaceous than simple and fruity. And as with almost any great wine, it’s organic too.
